Witness ancient olive groves, dancing trees in misty fog, gnarly trunks bent over with time. I don't have to be persuaded as to why the olive has been the symbol of peace, wisdom, glory, fertility, power and pureness. It only makes this landscape seem filled with true meaning, its beauty bursting forth with an array of cornucopian delights, not only going to my head and my belly, but also to my wide open eyes, nourishing my spirit. The olive trees, around the bend from my friend Giuseppe's family's country villa in Lazio, are over 2000 years old, he boasts. He always entices us with bruschetta dripping with their own scrumptious production of golden green oil, washed down with the harvested grapes of luscious white wine, which would make anyone a believer. To be enveloped by the vibrant rolling hills, the brilliant duomos and churches perched against the hilltowns, the crumbling aqueducts that symbolize the wealth of water's movement that were so necessary for the cultivation and survival of the ancient Romans, reminds me of the labor of love that goes into this fervent landscape, making the Italian countryside so undeniably resplendent and enchanting.
